Research Interests

  • Cell wall dietary lipids interactions
    Undertake research that defines the relationships between molecular structures of plant cell wall polysaccharides and lipids/ bile salts in vitro, ex vivo and in vivo. The initial focus is on the cell wall polysaccharides of cereal endosperm. - Understanding lipid digestion and absorption in the human body - Structure and role of bile salts in the lipid digestion - Interaction of bile salts and cereal polysaccharides
