Research Interests

  • Aged care foodservices
    Developing best practice models in the area of foodservice systems design - developing system thinking to solve how foodservice is managed into the future. Understanding how the science of systems can be used for the best outcomes of aged care services.
  • Menu planning
    Menus are the foundation of foodservices and developing better ways to deliver the menu, menu design and production is essential for the continual quality of any aged care home. The quality of menu planning is essential for addressing access, increased food choice and menu integration.
  • Nutritional support
    Building a strong system for the delivery and management of nutritional support. How best to achieve this, what mode of delivery work best and how to make lasting change.
  • Meal preparation techiques
    Exploring the way food is produced in aged care and mechanism for incorporating technology to support increase nutrition & food choice. This is vital for choice and for texture modified meals
