  • Using spectroscopy, particularly NMR and IR to investigate a range of topics in the area of nutrition and food sciences.
    Crystallinity of starches from different botanical sources Structure and function of plant cell wall non-starch polysaccharides Benefits of soluble dietary fibre and resistant starch in human nutrition Effects of digestion and fermentation on plant cell wall components such as cellulose and hemi-cellulose
